This is not something I often do, but I am posting a recipe today so that I can attend a new healthy recipe Linky party at Gracious Southern Living.
Stuffed Baked Tomatoes from The South Beach Diet Quick and Easy Cookbook
Prep time: 10 minutes Cook time: 10 minutes
“This warm, cheesy side dish pairs tomato and basil with mozzarella and Parmesan cheese - a match made in heaven if there ever was one! Serve it with grilled chicken, steak, or fish.”
4 plum tomatoes, halved length wise
3 ounces shredded part-skim mozzarella cheese (1/2 cup)
1/4 cup roughly chopped fresh basil leaves
2 tablespoon freshly grated Parmesan cheese
1 garlic clove, minced
Salt and freshly ground black pepper
Heat oven to 400 degrees
Scoop out the inside of each tomato half with a melon baller and roughly chop the scooped pulp. Combine tomato pulp, mozzarella, basil, Parmesan, garlic, and a pinch of salt and pepper.
Place tomatoes, cut side up, on a baking sheet, Spoon in tomato mixture and bake until cheese is melted and lightly browned, about 10 minutes. Serve warm.
Makes 4 servings
Nutrition per serving: 90 calories, 5 gr fat, 3 gr saturated fat, 7 gr protein, 4 gr carbohydrate, 0g dietary fiber, 230 mg sodium
This I really easy to prepare. It was a great side to grilled Salmon. If you are a tomato lover like I am, you should try this.
